Truwhip Banana Cream Pound Cake

If you like bananas and bread pudding...LOOK NO FURTHER!! (Inspired by Pound Dropper)
Truwhip Skinny is the game changing ingredient here. 25 calories per serving, no artificial colors or flavors, no high fructose corn syrup, non-GMO.
Vanilla cake mix (1 standard size cake mix box). My fave: Dr. Oetker Organics Cake Mix.
Organic eggs (3). My fave: I looooove Pete & Gerry's.
Unsweetened applesauce (1/2 cup)
Water (1/3 cup)
Vanilla extract (1 tsp)
RIPE bananas (3 large, mashed)
Sugar Free Banana Cream Instant Pudding Mix (1 box). My fave: Simply Delish Sugar Free Banana Instant Pudding!
Skim milk (1.5 cups)
Truwhip SKINNY (6 oz)
Vanilla wafers (to top the cake with)
Please check out my tips below before you begin :)
First, the cake:
Preheat oven to 350 degrees.
In a large mixing bowl combine: mashed bananas, cake mix, eggs, water, vanilla extract, and unsweetened applesauce.
Mix batter until completely combined (I used a spatula)!
Line a 9x13 baking dish with parchment paper (I rarely use cooking spray).
Pour batter into the baking dish.
Bake for 30-35 minutes or until a toothpick comes out clean when inserted. Meanwhile, move on to the topping!
Second, the "magic sauce:"
In a mixing bowl combine pudding mix and skim milk.
Whisk together until it thickens. Fold in Truwhip SKINNY!
Make sure the cake has cooled for at least 10 minutes before the next step.
Poke the cake with holes through the entire cake. This step is super important and makes all the difference in the cake's moisture and density later on (and in days to come as it "marinates") :)
Pour pudding mixture onto cake. Spread evenly until the entire cake is covered.
Top with mini vanilla wafers or regular size vanilla wafers. Check out my Tips first!
Cover and place in the fridge until ready to serve.
Third, prepare to serve your hungry belly:
When ready to serve, cut into any size slice you like!! You will see in my photos that we welcome all shapes and sizes :)

If you like your wafers CRISPY, do not top the cake until you are ready to serve it! I like my wafers soft and gooey, so I place them on top of the cake the night before. They will melt in your mouth the next day.
It may be hard to resist, but try to leave the cake in the fridge for about 24 hours before you dig in. IT MAKES ALL THE DIFFERENCE and gives it that "bread pudding" texture I love so much.
